People don’t eat deviled eggs for the white, and anyone who claims otherwise is not to be trusted. The flavorless white portion of an egg is a delivery system for delicious, deviled, yolky filling and, when making deviled eggs, the goal is to maximize the amount of filling in each bite. To best accomplish this, get rid of a white (or two).
